12 Meatless Mains: a round-up of favorite vegetarian dinners

We don’t religiously subscribe to the Meatless Monday movement, but more often than not, I find myself on a Monday afternoon staring into the nearly empty fridge and wondering if I could get away with eggs for dinner. My meal planning tends to begin on Tuesday and finish with a big Sunday dinner, so Monday is the perfect time for something vegetarian as I usually have plenty of produce on hand to play with.

Around the table, we hardly differentiate between meatless meals and the protein-heavy meat + potatoes fare. My boys love beans and lentils, and this is the perfect time of year for simmering a pot of either legume and serving them over rice. When I’m in a vegetarian rut, Pam’s excellent cookbook, Cook without a Book: Meatless Meals, helps me inject something new into our repertoire.

We’re currently on Mexico’s West coast, hanging out with my adored siblings and a small pack of cousins to Noah, Mateo and Clara, so I hope you’ll forgive a round-up post today. I actually surprised myself with all the vegetarian main dishes I’ve accumulated on this little corner of the web, so if it was an eye opener for me, I’m sure you could use a little review as well.

Who knows, you might get inspired for your own meatless Monday.

  1. We tried your Chickpea Stew and loved it. We’ve added it into our regular meal rotation. Thanks for another great recipe!

  2. Liz @ The HomeStyle says

I’m so happy you posted this! I’ve been trying to incorporate more meatless meals into our menu, and these are some fantastic ideas. On the cabbage rolls, what would you recommend to substitute for the ground beef to make them meatless? Thanks!

  3. I like to make pizzas without meat, but I usually don’t set out to make a meatless meal–I set out to use a vegetable from the CSA farm share and realize I’ve not included meat in the dish.
Thanks for a great recipe round up and enjoy your holiday.

  4. Love getting new vegetarian dinner ideas! Thanks for the round-up. I love making grilled tofu bowls, and soups with lentils, etc!

  5. We have a meatless meal at least once a week. I love these ideas to freshen up our normal meal rotation.
Enjoy your holiday!! Mexico with siblings sounds fantastic! =)

  6. Do you think lentils would work to replace the beef in the Slow-cooker Cabbage Rolls recipe? If so, would you just use cooked lentils, or should I season them differently?

  7. I’m loving this selection of meatless meals! Those quinoa-stuffed artichokes make my heart go pitter-patter. Hope you are getting some sun so I can live vicariously!

  8. Oh boy, excellent round-up! I eat meatless probably 5 nights out of the week, and I am always looking for new ideas : ) I hope you’ll share some pictures from your vacation with us!

  9. YAY!! Thanks for posting some love for all the vegetarian families who read this blog! 😀

(We love the lentil shepherd’s pie!)

  10. Sounds like the perfect time to be in Mexico! Your black bean burritos are our favorite meatless meal!

  11. Oh my gosh, I’m SO glad that you posted this!! Although we’re not vegetarians we only cook vegetarian at home (it’s cheaper and we live in the middle east where delicious cooked meat is available just a few steps outside my door when I want it!), so I really needed some new inspiration. I’m particularly looking forward to trying the shepherd’s pie which I’d been pondering trying for a while now!

  12. This vegetarian is happy to see this post! Some great ones I haven’t tried yet! Thanks!

  13. Another (most of the time) vegetarian happy to see this round-up and get some new ideas 🙂
