Blackberry Lime Cheesecake Popsicles

It has been hot here in Colorado. Hotter than we anticipated before we moved here, but everyone assures me that this isn’t normal. To compensate we have been spending a lot of time at our neighborhood pool, not cooking a lot, and drinking as much water as possible.

Weeks ago, as temperatures soared over 100 degrees F, I knew that we needed to add “make homemade popsicles” to our summer to-do list. I kept putting the task off and forgetting about it as we got busy with our new summer routine and settling in a new place.

Well, I finally got my act together after ordering a fun new popsicle moldOn top of my list of recipes to try was something creamy coupled with something fresh and fruity. These Blackberry Lime Cheesecake Popsicles fit the bill! I was glad to get something done from our summer to-do list. We’ll certainly be experimenting with more flavors and enjoying them with our beautiful Colorado Sunsets.

Smart snacking for summer

I‘m the first to admit I’m a champion snacker, and now that I’m nursing a fast-growing Clara, I rely even more on a nutritious bite between meals to keep my energy up during the day.

Our snacking changes from winter to summer, moving away from nut butters, granola bars, and the ever-present carrot sticks, to a wide variety of fruits, vegetables, and their derivatives.

I find that summer eating can be often carb-heavy – pancakes for breakfast, sandwiches for lunch, and burgers on buns for dinner – so we try to avoid other bread-types at snack time like muffins and crackers. Besides, who wants to have the oven on for baking on a hot day? Not me.

Summer Snacking Pledge

Katie Goodman recently wrote an excellent post detailing some tips to help expand the picky eater’s palate. When she mentioned that her family has a ‘fruits & vegetables only’ snacking policy, something resonated with me and I knew that was where we were headed for summer.

All too often summer snacks can be junk, with potato chips and sugary popsicles at the center of it all. Why not highlight seasonal produce such as crisp sugar snap peas and sweet cherries instead?

As of today, June 1, we are starting our summer snacking: fruits and vegetables only. Won’t you join us?

Frozen Treats: Cherry Limeade Popsicles

Beat the heat with our week-long series on simple frozen treats! Written by Katie of GoodLife Eats.

HOT is what it is around here. There is no getting around it anymore. Our days are filled with something frozen to eat, running through the sprinklers, and wading in the kiddie pool.

I love indulging in all of the delicious frozen treats that the summer season has to offer. And it’s actually fairly easy to keep those treats on the healthier side.

We tend to rely heavily on fruit-based treats in the summer. Not only are fruits a healthy way to get your sweet fix, but they’re great for curbing summer dehydration. Popsicles, smoothies, slushies, sorbet and more are all deliciously cold ways to feature the season’s best juicy fruit. Any cold, fruity treat is a winner in my book this time of year.
