17 best recipes to close out summer

It’s my favourite time of year to shop at the local markets.

The aisles are lined with baskets piled high with two-inch cucumbers and plump Roma tomatoes, inspiring me to add pickles and salsa to my canning list for the weekend.

Clara picks out a pint of deep red raspberries and I reach for a hefty cantaloupe. We can both get our favourites, for a few more weeks, anyway.

I try to resist the beautiful winter squash, piled six high in wooden crates, and pass by the emerald Brussels sprouts. I know they will be around for a while. Instead I turn my attention to sweet corn, small radishes and blueberries, which will be finishing soon.

This time of the year…

Ah, springtime, the awakening season. When all green life shakes off the dream of winter and reemerges in slow splendour.

This time of the year brings about such a surplus of new topics that I have a difficult time narrowing my focus. My mind wants to goes in every direction, like the seeds on a blown dandelion puff, chasing passions of mine like gardening, entertaining, camping, canning, cocktails, seasonal ingredients and more.

This week, May comes to a close and June begins. So where do I start on today’s blank WordPress page?

Do I tell you about that double batch of ramps that I pickled the day before leaving for London? Or the rhubarb syrup I am currently straining for jelly? We could talk about preserving the season. Oh, we could just talk about pickling and have plenty of fodder for dicscussion: pickled strawberries, pickled green beans, pickled asparagus or just plain garlic pickles.

What to Eat on Hot Summer Nights (Recipe: Versatile Black Bean Salad)

With temperatures hovering just under 100 degrees F since we returned from our vacation I have decided one thing about meal time: It is simply way too hot to cook right now. But that doesn’t mean I can’t prepare dinner for our family. We still have to eat something.

Grilling is a great option during these hot months. It keeps the heat where it should be: outside. I was so inspired by all of the great grilling recipes shared here on Simple Bites over the past week and can’t wait to try some of them.

I have never grilled with a cedar plank before. And after a recent trip to Greece, I’m dying to get my hands on some Haloumi so I can make Danny’s Grilled Peach and Haloumi Salad.

But what do you do when it’s too hot to even go outside? Many times I’ve felt to the point of near heat exhaustion as I stood over a grill flipping meat and vegetables.
