Herbed Avocado Egg Salad Tea Sandwiches

Originally, I thought I’d keep this post short and sweet. It’s egg salad, after all. How much could I say on the subject?

Quite a bit, as it turns out. As I was working with each ingredient, I thought about why I prepared them the way I did, and how the sum of their parts all add up to a sublime sandwich that has everything going for it: taste and texture, crunch and creaminess.

These Herbed Avocado Egg Salad Tea Sandwiches recently graced the tiered serving plates of an afternoon tea baby shower I had the pleasure of hosting. A few guests asked for the recipe, and since Mother’s Day is coming up soon, as well as picnics and other spring parties, I decided to share my method here.

We’ve also just picked up six spring chickens from a nearby farm and are already getting our first brown eggs from the pullets. Also, my chives are starting to take off in the garden. So you see, eggs and herbs are always the first harvest from our urban homestead, and these delicate tea sandwiches are a perfectly appropriate way to celebrate.

An Afternoon Tea Baby Shower

It almost seems like a cliche to write about a shower in April, but I had to share a few details from a recent celebration that was a long time coming.

This afternoon tea is also another chapter in my sister’s story, and since you’ve already joined us virtually for the winter engagement, the West Coast wedding, and the backyard reception here on the homestead, it’s only fitting we tie things up with a baby shower.

Now this joyous event had originally been planned to take place back in November, when my sister, Miranda, was six months pregnant, a comfortable stage of the pregnancy to travel from her Halifax home.

The invites had been sent, Miranda had purchased a plane ticket  – and then my nephew was born early. Almost 2 months early.

Cobb Salad Sandwich with Avocado Spread

Easter is right around the corner, and, for my family, that means there’s bound to be leftover ham and boiled eggs. I rarely want to eat leftovers as-is, so I always try to find a way to turn them into a different meal. Leftover roasted chicken becomes chicken salad or taquitos, or other favourites.

With ham, the obvious choice is to put it on a sandwich and call it a day. However, I also wanted to make use of the dyed eggs that are sure to fill our refrigerator the day after Easter. Enter the Cobb salad sandwich.

Quick Skillet Roasted Vegetables on Cheese Toast

Most of the time I feel good about my eating habits. I like fruits, vegetables, and whole grains and we eat a lot of them most days of the week. However, after all of the holiday festivities from the past month, I feel like I need to re-focus my menu and food choices.

Considering all the candy canes and pumpkin pies I have consumed recently, it feels really good to cut out sugar this month and find my way back to the fresh produce aisle. It can be harder this time of year to find fresh vegetables, but although there isn’t as much variety in the winter, there are a lot of delicious ways to prepare root vegetables.

Using Thanksgiving Leftovers: Lemon Pepper Turkey Sandwiches

Thanksgiving is my most favorite holiday.  In my opinion, all holidays are about food, but the Thanksgiving holiday really is all about food!  I have been so excited about the upcoming feast that I finalized my menu early and got a head start on the shopping and prep work.  I’m feeling really prepared this year.

In fact, I’m feeling so prepared, that I’m already planning a menu for the days after the holiday is over.  We will still have guests in town and lots of mouths to feed, so I’ve been thinking about ways to incorporate our Thanksgiving leftovers into post holiday meals that still taste fresh and interesting.  I’m also remembering that after days of laboring in the kitchen for the big holiday feast, I want my post-holiday meals to be quick and easy so I can enjoy my friends and family for the weekend.
