Spinach Crepes with Maple-Stewed Blueberries

The evening I prepped this recipe was just like any other. I puttered barefoot in the kitchen to the tunes of Buena Vista Social Club, music I am revisiting and finding as just moving as the first time I heard ‘Chan Chan‘.

I cracked eggs and beat them with flour, melted butter and sauteed spinach into a crepe batter that would chill while we slept, or supposedly slept. There was no way I could have known what the night held, although little Clara had been nursing a cough during the day and was reaching for me to cuddle more than usual.

The last of my prep finished, the table set for the morning, and the final email sent, I headed upstairs to wind down for the night. It was close to eleven, and it had been a long day. A long week. A leisurely Saturday morning breakfast and the whole weekend stretched out before us, full of projects and plans, among them an autumn hike in the fall foliage of the Laurentians.

Baked Pull-Apart Pumpkin French Toast (Overnight Recipe)

It’s a little difficult to focus on writing this post because all I want to do is head to the kitchen and mix up another batch of French toast for the morning.

I already know I have pumpkin puree in the refrigerator, and Danny sheepishly arrived home from work with two loaves of whole wheat miche under his arm “…in case you wanted to make more of that baked French toast.”

It’s official: we’re completely smitten with this pull-apart Pumpkin French Toast. It bakes up crispy on the outside and fluffy on the inside, serves up in slices just like pan-fried French Toast, and is marvelous with a homemade Molasses-Cinnamon Syrup.  You have to try it this weekend.

Five Simple, Natural Recipes for Homemade Pancake Syrup

Pancakes are somewhat of a religion in our household, but contrary to what most people think, we don’t enjoy them exclusively with pure maple syrup. Yes, around here it is easily accessible and somewhat affordable, but I like to change things up for pancake toppings from time to time.

A favorite of ours is fresh yogurt with apple butter, but we get even more creative than that and today I’m showing you some of those variations. Pictured above from left to right: buttery maple, honey-orange, molasses-cinnamon, vanilla-rice syrup, and blueberry syrups!
