I am not really into football, so the upcoming Super Bowl doesn’t really appeal to me. Truth told, I don’t even know who is playing. But I do love all the tasty party food that pops up this time of year! I’ll never say “no” to a good spread of party food.

One of my favorite easy, appetizers is hummus. It is healthy so you don’t have to feel guilty about eating it and it tastes great. Plus there are endless variations depending on what beans you use or what flavors you impart to the recipe.

Served Warm or Cold – Creamy Black Bean and Corn Salsa Recipe

Written by Kristen of Dine and Dish.

It’s the time of year for neighborhood parties, impromptu driveway get togethers or back on the deck wine chats with friends. Friends and neighbors are officially out of hibernation from the long winter days and gathering together, outside, is once again on everyone’s minds. It is this time of year when I make certain to have a repertoire of quick and easy appetizer recipes on hand, as you never know when a quick “hello” with someone might turn into a late night evening of friends and fellowship.

Two of my favorite ingredients to use in the spring and summer are corn and black beans. With these two ingredients on hand, the possibilities for quick and easy snacks are endless. You can make Black Bean Burritos, Black Bean and Corn Quesadillas, Black Bean Dip, Sweet Corn Relish, and more! Most of the recipes can be whipped up in a matter of minutes, so you won’t miss out on any of the outdoor social time. [Read more…]

Super Bowl Appetizers – Chicken Skewers with Roasted Red Pepper Dip

Written by Kristen of Dine and Dish.

Super Bowl Sunday is coming up and if you are like me, you will have a house full of game loving folks to feed and entertain. Actually, if you are like me, you’ll welcome the opportunity to chill out in the kitchen with the non-football game watchers and munch on the goodies over good conversation versus the Super Bowl excitement, but that’s besides the point.

Super Bowl Sunday is a day to fill your buffet up with finger foods, appetizers and desserts galore. I know everyone is gathered together for the game, but it is really the food that matters, right?

As part of my attempt to please everyone, one of my favorite things to serve at our Super Bowl party is Chicken Skewers with a variety of dips. Sweet dips, sour dips, spicy dips, mild dips… with enough dips set out for your chicken skewers, you will hopefully be able to have something served that will please every palate at your party.

Salute Spring! Peas (Recipe: Pea-camole)

Join us as we Salute Spring with a week-long series featuring the finest fruits and vegetables of the season. Written by Megan of Stetted.

Peas make me optimistic. After a cold winter, they’re the first of the spring plants to push through the dirt and begin reaching toward the sun. Once the tendrils start their grab, they’ll climb as high as you let them, only stopped by the limit of your trellis. They are harbingers of things to come, with lovely white blossoms leading the way for plump green pods.

If I had known how sweet and crunchy fresh peas could be when I was a child, I probably would have not shunned them as I did, choking down only what was necessary to be able to leave the table.

My son has no such qualms about peas. He gobbles them up as soon as they’re shelled, leaving the possibility for even attempting a recipe almost impossible. I can’t fault the kid.
