Thinly slice cucumbers. Use a vegetable peeler to shave the carrot into ribbons.Toss both vegetables with salt and sesame oil in a small bowl. Squeeze half a lime over the top.
Heap rice and meatballs into a shallow bowl. Reheat to desired temperature (I use a microwave).
Sprinkle meatballs with green onions. Build your power bowl by adding a side of kimchi, prepared vegetables and any other add-ins you choose.
Finish the dish with a generous squeeze of lime and a sprinkling of sesame seeds. Serve warm.
