2poundssweet potatoespeeled and cut into 1-inch pieces
1/4cuppacked brown sugar
2Tablespoonsflaked sweetened coconut
2Tablespoonschopped pecanstoasted
2Tablespoonsbuttermelted
1teaspoonvanilla extract
1/4teaspoonground cinnamon
Topping
1/3cupflaked sweetened coconut
1/3cupchopped pecanstoasted
Instructions
Coat your slow cooker with cooking spray. Place first 7 ingredients in slow cooker and toss to combine. Cover and cook on LOW for 6 to 8 hours, or until potatoes are tender. Lightly mash mixture. Sprinkle topping over potatoes and serve warm.
