Ingredients
1/2cup2% milk
2large eggs
1/2cupunbleached all-purpose flour
1pinchsalt
1/4cupunsalted butterthe best quality possible
pure maple syrupto taste, for serving
fresh fruitto taste, for serving
Instructions
Preheat oven to 450F.
Whisk together milk, eggs flour and salt to make a batter. Don't over mix.
Place butter in a 10-inch frying pan and place in the oven. When the butter is melted and bubbly, carefully pour the batter into the pan. Bake for about 12 minutes or until the sides are puffy and brown and the centre is set.
Remove from oven, cut into 4 portions and serve with maple syrup and plenty of fresh fruit.
