4large slicescrusty bread
4teaspoonssalted butter
3tablespoonscinnamon sugarsee Notes
1/3cupricotta cheese
1/2cup sliced strawberriesabout 8 large
Instructions
Preheat the oven to Broil. Place the toast on a baking sheet.
Toast the bread under the broiler for about 90 seconds per side OR until the toast is golden brown. Keep watch the whole time to make sure it does not burn. Ovens will vary.
Remove the pan and butter the toast with 1 teaspoon of butter per slice.
Sprinkle the toast generously with cinnamon sugar (about 2 teaspoons per slice). Return to oven for 1 minute to broil the sugar. The kitchen will smell delicious and the cinnamon sugar will be lovely and caramelized. Cool the toast slightly.
Mix 2 teaspoons of cinnamon sugar with the ricotta and stir to combine. Divide the ricotta among the toasts and spread to cover.
Arange the sliced strawberries on top of the ricotta toasts. Sprinkle with a little remaining cinnamon sugar. Place on plates and serve.
Notes
Make your own cinnamon sugar using 1/4 cup white sugar and 1 teaspoon cinnamon.Feel free to use any fresh fruit that you have on hand. Peaches, blackberries, kiwi or mango would all be delicious.Mascarpone cheese may be substituted for the ricotta.
