This time of year I start looking for foods that are a little more comforting and a little less just something quick to get on the table. But it still feels like summer as it hasn’t quite cooled down much yet so I don’t want to turn on the oven very often.

Skillet dinners are perfect for that. This Skillet Chicken and Zucchini Parmesan doesn’t require very much babysitting at the stove. It cooks, for the most part, unattended and doesn’t make my kitchen as hot as turning the oven on.

Canning Week: Zucchini-Pepper Sweet Relish

Relish has always been the squeeze bottle I avoided on the condiment table. With its iridescent green chunks and watery pea-green liquid:  Non, merci. However, today’s recipe for homemade Zucchini-Pepper Sweet Relish is an entirely different garnish from that one.

Once again, I put my pickling in the hands of an expert and followed a recipe from Marisa’s Food in Jars. I loved the absolute pile of produce that went into the making of the relish and the terrific yield – 10  1/2 pint jars (which is the size I used). With one batch, I  stocked my pantry, as well as gifted a few jars to my little sister who just moved into a new apartment.

Michel’s Super Bowl Guacamole Recipe (vlog)

On Sunday afternoon, Danny and I will gather at his father’s place and watch the Super Bowl with as many of his seven other brothers as are in town. There’s also a handful of grandchildren, family friends, wives and girlfriends who help push the numbers well into the twenties, but there’s always plenty of food to go around.

Full confession: I’m not a huge football fan. The Super Bowl is about the only game I sit through all year, and that is mostly because of the company — and the food. For years, my brother-in-law, Michel, has been bringing a massive bowl of guacamole that, together with a few bags of tortilla chips, keeps the gang of us happy until half-time. It always keeps me coming back for more, and with avocados in season right now, guacamole is ideal Super Bowl party fare.

It wasn’t until recently that I discovered Michel’s guac had a secret ingredient, and of course when I did, I knew I had to share it with readers. It is an absolutely brilliant addition that makes for a healthier guacamole and helps stretch it out. And when you’re making dip for twenty people, anything that stretches avocados is a good thing.

How to Make the Best Zucchini Bread Ever

One of my favorite narratives on zucchini is from Barbara Kingsolver’s ‘Animal, Vegetable, Miracle’ where, when faced with a unrelenting crop of the green squash, she devises many ways of using up the abundance them in her prolific garden.

She baked, steamed, fried, and froze zucchini, as well as gave them away to friends with such abandon that she freely admits: “Our gardening friends knew enough to slam the door if they saw a heavy sack approaching.”

I could completely relate to Barbara’s dilemma (if you can call an abundance of food a dilemma), and I, as a gardener, fully understand a zucchini’s capability to turn into a baseball bat practically overnight if overlooked on the vine.

Fortunately, I have a strategy to help me maintain the upper hand during the Great August Zucchini Invasion: Zucchini Bread. Around here this humble loaf is a favorite snack for the kids, a bake-sale best-seller, and alongside a tall glass of milk, has made it’s way into our ‘Guilt-Free Non-Suppers‘.

Now some of you probably think that you have the best zucchini bread recipe, others perhaps have never found a recipe they liked, –and chances are a few of you are thinking: “Zucchini?
