Mediterranean Pasta Salad with Asparagus

Our backyard was a busy place last weekend, with family and friends dropping by and staying to visit. It’s exactly how I love summer life to unfold, with spontaneous spritz on the patio and campfire s’mores just for kicks.

A vegetable-packed pasta salad is one of the ways I like to feed a crowd without too much effort, especially when it is sweltering outside. You can make it in advance or whip it up at the last minute; serve it on its own or with a side of grilled sausages.

It’s fast to prep, is easily customizable and enjoyed by all. Simply put, pasta salad is just smart, simple summer cooking – which is why I can’t believe I’ve never shared a recipe for it until today. Today’s recipe for Mediterranean Pasta Salad is our go-to salad during the hot months. I give my version, but also suggest plenty of ingredient variations for you to make it your own.

January Carb-Lover’s Pasta Round-Up

We’ve been immersing ourselves in winter sports ever since we started our vacation in British Columbia and boy, do you work up an appetite while exercising out in the crisp winter air.

Downhill skiing on the incomparable Hudson Bay Mountain, cross-country skiing at the scenic BV Nordic Centre, ice skating on Lake Kathlyn and snowshoeing up around Crater Lake – if there is a snowy adventure to be had, we’re game.

A decent chunk of the remainder of our time has been cooking for the incredible appetites of the six rosy-cheeked cousins (my kids plus my brother’s). A humungous bowl of pasta always does the trick for dinner, and the little customers love it too.

Aimée’s big batch Chicken Noodle Soup recipe

It’s currently a white-out on the homestead, as the first big storm of winter is blanketing the place in powder. I’m thrilled at the prospect of a white Christmas – and even happier that I have a stash of homemade chicken soup in the freezer for snowed-in suppers like tonight.

I always make an enormous batch of this simple soup before the holidays as it seems like a necessary antidote to all the rich food and sweets to come. I also simmer it in hopes that it will help us combat the seasonal maladies that are always going around. This nourishing soup is such a well-rounded family meal, and that certainly aids my intentions to eat better this month.

In addition, is there anything more comforting than a bowl of chicken noodle soup? Mine uses fennel alongside celery for a fragrant mirepoix and occasionally has a grating of ginger in the broth (and/or turmeric) to help fight colds. I think this soup is special, it’s certainly practical, and today I’m sharing my method for making a nice big batch.

Campfire One-Pot Macaroni & Cheese

We’ve been road tripping through the blistering hot Niagara region of Ontario for the past week, visiting friends, picking stone fruits and enjoying plenty of beach time.

This easy pasta has come in handy for a quick meal when we have returned to our Airbnb hungry after a day of exploring. In the past I’ve always relied on the one-pot dish for camping trips, but it is a good recipe to have in your back pocket for any time you need a fast – and comforting – meal.

Here I’ve included photos of the Dutch oven campfire macaroni & cheese, but you can also prepare it in a heavy bottomed pot in your own kitchen.

Eat Seasonal: Easy Roasted Vegetable Spaghetti

I want to talk about tomatoes and corn, eggplant and zucchini, and all the other beautiful produce that is so abundant right now, but first, I must say thank you all for your kind responses to my last post.

You commented, emailed and left messages on social media; I read every one and was much encouraged. It really helped to hear from so many people that the emotional toll of a car accident is just as severe as the physical one. As it turned out, after a week of exhaustion, sensitivity to noise, and bad headaches, the conclusion is that I did suffer a mild concussion. Rest is needed, as is time away from screens, so this post will be short.
