Lemon Ricotta Pound Cake and a KitchenAid mixer giveaway

Today is our wedding anniversary, hence the cake.

It’s a light, lemony creation, which I’m serving up with a dollop of ricotta and maple-roasted rhubarb that was picked straight from my garden. Spring, long weekends, anniversaries – there is much to celebrate these May days and cake is just the ticket.

Spinach Salad with Grilled Strawberries, Asparagus and Walnuts

One warm evening after dinner last week, we found the first wild strawberries ripening in our small patch out by the garden. Clara, barefoot and hatless as usual, parted the thick leaves with her small hands and there they were, as bright as rubies and as sweet as candy.

Earlier that same day, I picked up two baskets of the first locally cultivated strawberries, and henceforth there will be strawberries on our table for as long as the season flourishes. We really only eat them when they can be grown ourselves or bought locally, so the arrival of the red gems is much celebrated.

I’ve promised the children an upcoming dinner devoted entirely to strawberries, as soon as the fruit is at its peak. Today’s scrumptious salad will definitely be on the menu, perhaps alongside strawberry-glazed grilled chicken, with fresh strawberry pie or roasted strawberry sundaes for dessert.

Sugaring Off and Bacon-Wrapped, Maple-Glazed Roasted Carrots

I grew up as the younger sibling to both a brother and a sister and everything happened to them first: sleepovers, concerts, dating, driving lessons…

It was one of those things I had to make peace with, knowing that eventually I too would be able to wear make-up, get a summer job, or go overnight camping with just friends and no adults.

Watching spring come to our Southern neighbours in a splash of vibrant colour on Instagram while we are still sitting in slushy mud requires a similar resignation. I know it won’t be long before I too am snapping the ends off of bright green asparagus or roasting strawberries for an ice cream sundae, but for now, I have to be patient.

Fortunately, here in Eastern Canada we have a fifth season to tide us over until the blossoms bloom and the bulbs burst – the maple sap run. It’s an utterly magical few weeks when the towering maples, which already give so much in shade, oxygen and sheer beauty, offer up their sweet, sweet sap for the taking.
