Meyer Lemon Bundt Cake with Candied Lemons

At the prompting of a few friends and one sister, we’re watching The Kindness Diaries on Netflix as a family right now. One of our family ‘mottos’ is “Above all, be kind.” so the series dovetails nicely with how we are endeavoring to live out our lives.

For me, showing kindness nearly always translates into food for others, whether it be a meal delivered, dinner around my table or, more recently, hunger relief. Today’s recipe for Meyer lemon bundt cake is exactly the type of cake to bake for a friend and leave it, wrapped in a tea towel, on their front porch.

Equally worthwhile is to invite a friend over to join you for afternoon tea and cake. As long as cake is shared  – between friends or strangers – the world will continue to become a better place. I’m pretty sure I read that on a t-shirt somewhere.

Rustic Lemon Layer Cake for a baby shower

November is the season of comfort food, which for me roughly translates into coffee and cake – at least today it does.

Lately I’ve taken to retreating into my warm kitchen in the morning with a stack of the fall’s latest baking books and only emerging when I feel adequately caffeinated and something delightful is cooling on the counter. We can only eat so much, and I gift a good portion of my baking, but it is always welcome to have a little assignment.

So last weekend when a few close friends and I teamed up on an (actual, not virtual, although today’s is virtual) baby shower, I volunteered to bake the cake. I’d been thumbing through both Homemade Decadence and Butter Baked Goods dreaming of layer cakes and fluffy frosting and this was the opportunity I needed  to break out the cake pans. I chose a recipe from each book and both were so spectacular, I requested permission from the publishers to share them with you here.

The recipes can be scaled up or down, should you one day find yourself committed to making a wedding cake or just want a crumb of something sweet for Sunday dinner.  I think you’ll agree, few things in life are as enjoyable a frosted slice of cake, so read on for the tutorial, recipes and virtual baby shower you can join, too!

Honey-Sweetened Peach Lemonade

Fruity and light, thirst-quenching and utterly delicious, this Honey-Sweetened Peach Lemonade is the perfect finish to summer.

As long as there are peaches to be had, you can be sure we’ve got a basket ripening on the counter for salads, cobblers, and juicy snacks.

They are Noah’s absolute favourite fruit, which is why it made sense to feature them in a honey-sweetened lemonade for his recent birthday party. We celebrated Noah’s ninth birthday on Sunday – which is just mind-boggling because didn’t I just make this robot cake for his seventh? And his third doesn’t seem all that long ago, come to think of it.

Perhaps I’ll post a few more photos from the party later in the week, but this recipe for peach lemonade had to be shared as soon as possible. Hopefully you haven’t moved onto apples and pumpkin just yet; there’s plenty of time for that later in the fall.
