Hungry? Ideas for good eats from my late summer fridge

I‘m a fan of organizing the refrigerator before a long weekend or major holiday. It happens at Easter, to make room for ham and cheesecake, and before Christmas, in order to house party punch and appetizers.

It makes me feel on top of things, at least in one department! This Labor Day weekend we’re having a few friends over and I’ve pepped a few things in advance so I can spend more time visiting around my grill.

Grilled Chicken & Sweet Pepper Fajitas

I‘m late to the grilling party this year, mostly because our ten-year-old gas barbecue finally called it quits earlier in the summer. I flipped a few burgers over a campfire, and even grilled trout over the open flame, but it wasn’t until we were well into August before we invested in a charcoal grill.

Just in time, too, because I can’t go through this time of the year with out grilled fruit salad, cedar planked salmon, or smokey shrimp tacos. This grilled summer vegetable salad is another favourite…and the list could go on and on.

Our Weber came at the recommendation of family grilling expert, Jan, and my photographer/grill master friend, Tim. I have been wanting to make the switch to charcoal for some time, although I wasn’t quite prepared for the learning curve. It’s…challenging. And how I love a good challenge.

I developed these vegan lentil sloppy Joes for Jamie Oliver, as they are focusing on special diets on his blog this month. By the way, if you follow a gluten-free, vegan or vegetarian diet, you certainly want to check out all the new recipes.

As for my contribution, well we’re kind of crushing on how good it is.

Take time for tea

This summer has been a blur and from what I have gathered in talking to others, it hasn’t only sped by for me. Although we’ve seen a lot of friends and family, there has been very little meaningful conversation. You know how that can happen sometimes? Yeah.

When I saw that my birthday landed mid-week (today!) I knew I wanted to sit down with a few close friends and connect, preferably over tea and scones. Just unhurried conversion, no agenda, countless cups of tea and plenty of laughs. These moments are few and far between, and if we’re not intentional about creating them, can slip away entirely.

29 New Lunchbox Ideas

If the current weather is trying to get us in the mood for heading back to school, it’s working.

Yesterday morning felt like a brisk autumn day; I sent the boys outdoors with hoodies and socks, in addition to their usual attire, and they returned a short while later to request hot cocoa. It feels as though summer has been even more fleeting than usual, leaving me wishing for one more weekend to barbecue and enough heat to turn my green tomatoes to red.

Maybe a few more hot days are to come, maybe not, but instead of grasping at summer like I usually do, I’ve decided to look ahead to fall – the return to books and the inevitable school lunch.

If I have a lunchbox plan down on paper – a handful of ideas, a shopping lists, new items to try and old items to reintroduce – I’m good. Then I can take it morning-by-morning, a week at a time. This post is just as much for me as it is for you; I tend to forget what is in the archives and how much we enjoyed certain recipes.

So let’s take a look at some new ideas for school lunches together and get ready to make a plan, because, ready or not, that first day of school is coming up soon.
